This Typica comes from a very talented coffee producer and roaster from Chiapas, Mexico, specifically San Jose Ixtepec, Motozintla, Chiapas. The coffee was carefully hand selected, and processed in an alcoholic natural fermentation for 120 hours. Neri has a deep level of understanding in the production of the coffee and the roasting of coffee. This allows him to execute the process, roast the coffees, and brew the coffees to get real time feedback.
Flavor Notes: Apricot, dried fruits raisin, piloncillo and bakers chocolate. The texture is silky with a clean finish.
